Soul food - good for the soul! Sadly not everyone experiences a healty home-cooked meal. Eating out at restaurants is the norm and if your Mom and Grandma enjoy cooking every Sunday, you are extremely lucky.
Sunday dinners down South, especially in Alabama (at my house) usually consist of greasy, fried foods. My brother, sister and I tend to complain when things aren't fried. However, last Sunday, this was not the case. Even though the usual meal was not cooked, it was still delicious and filling - (unlike most fast foods that keep you craving for me and do not fill you all the way up.) For dinner, my immediate family and I enjoyed baked turkey, collard greens, peas, corn on the cob, green beans, corn bread, and macaroni and cheese. Instead of a bottle of Sprite or Orange Soda, Mom made each of us commit to at least two full glasses of water. She also made sure that we ate in reasonable proportions instead of just piling on loads of food. At first, I thought that this was going to be horrible. Eating healthy is not always enjoyable plus, being a Southerner myself, I had gotten used to every thing being fried. Fried foods have become my way of life. But since Mom is dieting and Grandma is a Type-2 Diabetic, I had no choice but to try the unaccustomed way of cooking out. Less sugar, barely any salt, vegetable oil, and baked foods. Sounds like a bad combination right? Well, it actually wasn't so bad. I wasn't too thrilled about Mom telling me how much food to put on my plate. I am practically grown and I know what I am capable of eating. I mean, the more food on your plate, the happier your stomach is right? WRONG. These proportions that Mom suggested actually made me and the rest of my family full. I guess less is more!
